Seconding Daytrader in Seaside, that's the name I hear most for crispy tuna rice. If you're on the east end, Shaka Sushi and Cocktail Bar in Inlet Beach is another good bet. Either way I'd call ahead, since crispy rice isn't always a standing menu item.
